I was not this person 2 years ago

I was struggling internally and so unhappy with the person I was becoming. I wasn't going after my dreams and I wasn't motivated or passionate about anything. My life was passing by and I was stuck in the same old patterns of low self esteem, crappy moods and being jealous of everyone else around me making something of their life. -- if I'm being honest. It was fun to be that person.

Fast forward to now. I feel like I've grown into a new person! My small investment has given me so much excitement about where I'm going and the things I am doing. I have a sense of purpose again and I love the people I have surrounded myself with. Beachbody coaching has allowed me to continue to stay home and still have a career in something I LOVE all by working just an hour a day!

How crazy is it that I get to help other people who I choose to work with get healthier and happier while working on myself in the process and get paid for it.

This business has given me a new sense of HOPE and passion for helping others. The financial part of this business is only a small bonus compared to the changes that are happening everywhere else.

Guilt Free PIZZA!

PIZZA!! Who doesn't love pizza?! I mean, seriously, its like my best friend! Before I give you this recipe, I wanted to tell you that I have tried other cauliflower crust recipes that I didn't like at all. They were sticky and nothing like a crust. This one is PERFECT in my opinion! You can hold the mini slices like you would a normal pizza AND the edges get a little crispy!

OKAY here is the recipe--

Ingredients:
Crust-
2 eggs
1/4 cup mozzarella cheese
2 cups riced cauliflower (grate raw cauliflower on cheese grater or in a food processor)
1 tsp. minced garlic
2 tsp. parsley or basil
1/2 tsp. pepper
dash of salt

Pizza Toppings-
1 cup marinara sauce
Various veggies (whatever you want!)
Mozzarella cheese

Directions:

Preheat oven to 450 degrees. Cover a sheet pan with parchment paper.

In a bowl combine riced cauliflower, seasonings, eggs, and mozzarella . Divide into 2 equal amounts and press evenly on the parchment paper.
(( in my picture I did four but I would suggest doing two to make it easier))

Bake the crusts at 450 degrees for 12-15 minutes.

Remove the crusts from the oven.

From this point you will assemble your pizza with whatever you want! I spread the marinara sauce and cheese on then added my veggies.
**be careful with how much cheese you add! The fix allows you 1/3 cup of fats, cheeses and nuts per day.**

Put back  in oven to melt the cheese and cook the veggies! (because the crust is already cooked, be sure to slightly cook the veggies you are using first!). I left mine in there for about 8-10 minutes!

Serves 2.
21 Day Fix Containers- 1 green & 1 blue. Any additional veggies you add will count towards the green!

Philly Cheese Steak Stuffed Peppers

This is a great alternative to a traditional philly cheese steak!! My entire family LOVED it!!

Ingredients:

2 Green Peppers

1/2 Sweet Onion

1 Lbs Minute/Shaved Steak

2 tsp. Worcestershire sauce 

Salt and Pepper to taste

1 Cup Shredded Mozzarella cheese / any cheese of your liking

1 Tbs Extra Virgin Olive Oil


Directions:

Preheat Oven to 350 degrees.

1. Cut peppers length wise and remove seeds and ribs. They should look like little cups! Place in a glass casserole dish and pop in the oven for about 10 minutes. Take out and set aside.
1. While the peppers are cooking, cut onions into long strings and sauté, on high, in olive oil until they're translucent.

2. Add steak, worcerstershire, and seasonings to cooked onions and cook until it's no longer pink

3. Return to your peppers and fill bottom of the peppers with a layer of shredded cheese

4. Layer on the onion and meat mixture

5. Add a final layer of cheese

6. Cook for 15-20 minutes. Until cheese is melted. If you want a softer pepper, add some water to the bottom of the pan and cover with tin foil.
