Cauliflower Fried "Rice"

Oh my gosh!! This stuff is amazing!! I LOVE Chinese food but lets get real, its not great for your health! Well this recipe changes ALL OF THAT!!! Looks and tastes exactly like fried rice but is actually good for you!

Cauliflower Fried "Rice

Ingredients

2 cups cauliflower
2 Tbsp. sesame oil
1/2 small white onion, chopped
1 cup frozen veggies (I used carrots & broccoli! Carrots and Peas are the norm!)
2-3 Tbsp. soy sauce (more or less to taste)
2 eggs, lightly beaten
2 Tbsp. chopped green onions (optional

1. Rinse and chop the cauliflower into florets and put into a food processor. Pulse until cauliflower is small and resembles rice. This part is really messy!!

2. Preheat a large skillet on medium heat. Pour sesame oil in the bottom and add the onion, and veggies and fry until tender.

3.Slide veggie mixture to the side of pan and scramble the eggs. Once cooked, mix the eggs with the veggies.

4. Add the cauliflower to the veggie and egg mixture. Pour soy sauce over the top and cook until heated through and cauliflower is tender.

Top with chopped green onions if desired!

**I added 1 1/2 cups of cooked and chopped chicken breast to make this a complete meal!

Monday Motivation

For hitting my January biz goals I was able to attend a live webinar with Jen Sincero, the author of You are a Badass!

She speaks my language when it comes to self love. Absolutely love her book! 
.
Anyways, one thing that caught my attention was when she was talking about your mindset and how vital it is to your success. I've heard this many times before but it's so TRUE!! 
.
You can't be happy if you are focused on the negative. 
.
You can't succeed if you are focused on the fact that you may fail.
.
Stop the negative and turn up the positive vibes! Your mind is a powerful tool, use it!

My Rollercoaster

I've struggled my entire life to feel happy with my body. I have rollercoastered from gaining 20+ pounds my freshmen year, to adding an additional 30lbs from pregnancy, to dropping from a size 14 down to size 2 dress for my wedding in 2010. From there I got pregnant two more times with more gaining and losing weight. As a result of all of that, my self esteem constantly at an all time low and I felt miserable.
.
The only time I felt happy was when I was at my thinnest and to be honest, I wasn't healthy. The things I was doing were probably more harmful than good and it the weight loss didn't last for very long. 
.
One moment always sticks out to me-- I was in the dressing room, looking for a bathing suit for our family trip to Florida and literally wanting to cry. I didn't want anyone to see me and I just felt so depressed about the way I looked and felt. 
.
Fast forward-- Insert Beachbody-- and I've STEPPED OFF that rollercoaster.
.
In 2014, I finally found a plan that worked for me and my family. It was simple, easy to follow, and gave me complete directions on how to eat healthy and in the correct portions without breaking my budget or having to make separate meals just for me. I didn't have to count calories or worry about cutting out food groups. This was a real life, nutrition plan that changed my lifestyle for the better.
.
As I started to exercise, I found it was therapeutic in that it helped me feel stronger and happier than I ever experienced before. It was relieving my stress and giving me something for ME. I could feel the changes starting to happen and I was only spending 30 minutes a day working out with little to no equipment. 
.
Now that I have been through the trials of figuring this all out, I want to share it with others who suffer from the same things I went through. I'm not saying I'm perfectly happy or that its a magical cure, I'm a work in progress but I can say that I'm finally proud of who I am becoming. I feel healthy, strong and loving the long term results I'm building -- I want that for others.--

Making Time for YOU

Now more than ever people are getting busier with everything they pile on their plate. I get it, I say "yes" to so many things when a simple "no" would make my life so much easier. The fact is that saying "yes" to doing something means saying "no" to something else. Its a give and take that can get dangerous if we let our priorities fall to the side.

One of those priorities that always seems to get pushed back is our health. Yes, even though you may be sitting here reading this healthy as a horse, your health is and always should be a top priority. I can't even tell you how much it kills me when someone says that they are healthy and don't need to worry about it yet. YET? YET? Your health should not be taken for granted.

As a culture we tend to have this reactive attitude when it comes to our health. The problem is that its so much harder to "cure" something once its already happened, whether its diabetes from weight gain, high cholesterol or a million other issues that comes from not making your health important. Many times you hear people wish they made better choices or listened to their doctor.

Its time to stop that cycle. We need to start being PROACTIVE about our health and strengthening our body and mind so we can endure everything this life has to throw at us.

When I finally realized this it was after my 3rd baby and I was feeling pretty awful about the way I looked and how I felt on the inside. I suffered from extremely low energy, took naps every afternoon, felt weak and lacked confidence in myself so much so that it changed the way I was around others.

That is when I was introduced to health and fitness accountability groups. I signed up with T25 and Shakeology because that was supposed to be help me even with a busy schedule like I had being a mom of three! I was pretty skeptical but gave it a try because I was desperate for a change. It wasn't 2 weeks into the group that I began to feel alive again. I started to feel stronger and healthier. I felt a rising confidence in myself because of the positive support coming from the accountability group and I loved it.

With joining that 30 day accountability group, I had to say "no" to somethings.  My workouts were under 30 minutes per day so I just woke up a little earlier but it really wasn't a big deal since the workouts boosted my energy so much throughout the day that I actually liked waking up early. It also meant I'd need to spend a little more time meal planning and prepping. Once I got the hang of it and learned a few tricks, it started to get faster and faster until it saved me so much time during the week that I didn't care how long it took on Sunday afternoon.

You see, even with my busy schedule I was able to get healthy because of the time efficient workouts and simple nutrition. I may have had to say "no" to somethings in the beginning but in the end, because I put myself and my health as a priority, everything got better. I am happier and more excited which directly improves the atmosphere of our household. Now, I have the energy now to run around and play with my kids and they love when we can play family soccer games together! I have never felt more strong and confident in my own skin than I do now. I am in the best shape of my entire life even after having three children and it was all from working out 5-6 times per week for 30 minutes a day, drinking Shakeology and eating clean.

Busy Life Tip #1

One thing I've learned is that eating clean is essential to reaching your goals. *There are no quick fixes.* You have to eat right and workout in order to lose weight, tone up, and especially put on muscle. Not to mention, it's much easier to maintain for the long term! 

Meal prep and planning can get time consuming but I'd discovered ways to shorten that time AND still feel like you aren't eating the same boring thing everyday!

^^ that's the kind of stuff I share in my health & fitness accountability groups ;)
